Question Of The Week


We finally replaced our grill this weekend after being without for about 9 months! So, I'm excited about summer meals. We love grilling vegetables and are always willing to try new things.

One of our favorites is grilled zucchini. Lightly brushed with olive oil and then sprinkled with red pepper.....absolutely delicious. Tastes like summer.

I already told you mine.

BUT another summer thing I love is a huge fruit salad with poppy seed dressing. YUM! Of course, that doesn't go on the grill but it does taste like summer.

grilled portabella mushrooms. Marinated in olive oil and balsamic vinegar and sprinkle with garlic.
Garlic is good on everything!
place on the grill and yummy! We just did some this weekend!
I also love making kabobs on the grill. Pineapple make them extra good!

Spiced Chicken and Grape Skewers
Ingredients
2 tablespoons olive oil
1/2 teaspoon lemon zest
1 tablespoon lemon juice
2 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon salt
1 pound boneless skinless chicken breast, cut into 3/4-inch cubes
8 (10-inch) skewers
1 1/2 cups seedless green grapes
Cooking spray
2 tablespoons chopped fresh mint leaves (I didn't use this)
1 lemon, cut into wedges

Directions
In a medium sized bowl whisk together the oil, lemon zest, lemon juice, garlic, cumin, coriander, and salt. Add the chicken to the marinade and toss to coat. Marinate the chicken for 20 minutes. While the chicken is marinating, soak the skewers in water if wooden.

Thread 4 pieces of the chicken and 4 grapes onto the skewers, alternating them. Spray a grill pan with cooking spray and preheat over a medium-high heat, or prepare an outdoor grill. Grill the chicken until cooked through, about 3 to 4 minutes per side. Sprinkle with mint and serve with lemon wedges.

Does beer count as a food? JK - we do a lot of pork tenderloin with a spciy rub (paprika, garlic, pepper, salt, cayenne pepper, brown sugar).

OK, go get one of those grill baskets. We cut up Zuchinni and Squash into big chunks (not sure why, but size of a big marshmellow comes to mind), cut onion into 8ths, baby bella mushrooms, green, red, and yellow pepper cut into big pieces too.

Toss with olive oil and grill mates (it is a seasoning I found that is really good! I use the garlic and herb one and I put ALOT on the veggies).

Throw them in the grill basket and toss every few minues or so. SO GOOD!!!

I do these and then have potatos in the oven. Cube up red potatos and toss with EVOO, salt, and pepper. Put on cookie sheet and bake for 30-45 minutes or until potatos are cooked. You mush stir them around every 10 minutes or so.

Marinade chicken in Allegro marinade...it is SO GOOD! Find it at the grocery store by the other marinades...yellow label.

One last thing...Ballpark has a new hotdog...Angus. They are the best hotdogs ever! So good with course grain mustard...yummo!!

Yummers! All of these sound delish! BTW, we stayed at the marriott Stellaris Hotel & Casino in San Juan. It was fab!

Sweet corn on the cob! Tried this for the first time last week and it was DELISH.

1. Shuck the Corn
2. Soak in Water for 30 minutes
3. Wrap in foil
4. Grill 10 minutes
5. Flip and grill another 10 minutes
6. Open foil, brush with butter & salt and YUM!

The kids love grilled asperagus! It is so much better on the grill! Yum!

We love to grill vegies too. Zuccinni is the best, we like asparagus too-with just olive oil, salt, and pepper. Corn on the cob and pork tenderloin. We eat a lot of fresh fruit. right now we are into berry salads-strawberry, blueberry, and either black or raspberry-depends whats on special.

Favorite grill recipe is a pita pizza with goat cheese and caramelized onions - total yum.
